Helmed by Executive Chef Jonas Juchli, the 5-star hotel acclaimed culinary team is already generating buzz with their innovative concepts for the four distinct dining venues. Each establishment promises to deliver exceptional gastronomic experiences that will redefine Kuala Lumpur’s vibrant food scene.

China House is led by Master Chef Alan Shao, who brings authentic Northern Chinese cuisine to life with contemporary style, highlighted by his signature wood-fired Peking duck—a crispy, golden showstopper prepared in the open kitchen in true traditional Beijing method.

At ENSō Izakaya & Bar, Master Chef Masami Okamoto redefines Japanese dining with a vibrant twist, pairing authentic izakaya dishes with a live DJ experience, soon making it Kuala Lumpur’s most dynamic culinary destination after dark.

Assisting Chef Jonas are Executive Sous Chefs David Soh and Gui Keat Lee, ensuring seamless service across all dining venues. Together, this all-star culinary team delivers unforgettable dining at every level—from grand weddings to intimate lounge gatherings—each with impeccable technique and innovative offerings. Meanwhile, Chef de Cuisine Jordan Mah brings his culinary expertise to the forefront at the Midtown Brasserie, further elevating the dining experience.

Completing the culinary dream team, Executive Pastry Chef Jason de Oca creates exquisite desserts that elevate every dining occasion. Together, this talented ensemble promises to delight guests at every level.

Executive Chef Jonas culinary philosophy, he brings the Hyatt’s sustainable dining vision to life at Hyatt Regency Kuala Lumpur at KL Midtown. Guided by principles of responsible sourcing and minimal waste, he exemplifies this approach through a concept that prioritizes quality and freshness over quantity.

“Today’s diners are increasingly conscious of their environmental impact and food quality,” says Chef Jonas in particular about the dining concept at Midtown Brasserie. “That’s why we’ve reimagined the buffet experience—with most dishes prepared à la minute rather than held in chafing dishes. This ensures peak freshness.” The Midtown Brasserie’s “Best of Asia” concept still offers wide variety, but with thoughtful execution. Signature dishes like Fresh Mud Crab are cooked to order, ensuring they arrive at the table perfectly hot and fresh. Rather than continuously reheating large quantities of food, the kitchen prepares smaller batches throughout service.

Guests can watch Chef hand-pull noodles at the live la mien station or select their preferred cut of steak from the display, which is then cooked to their exact specifications. The open kitchen design allows guests to witness the Chefs’ sustainable practices firsthand, from careful ingredient selection to precise cooking techniques. “It’s about respecting both our ingredients and our guests,” says Chef Jonas. “By cooking to order, we maintain superior quality while minimizing our environmental footprint.”
