[MIGF 2014] Samplings on The Fourteenth @ Berjaya Times Square, KL

Coming to the fourth year of joining Malaysia International Gourmet Festival (MIGF), Samplings On The Fourteenth, the well-respected Western Classic restaurant located at the 14th floor of Berjaya Times Square Hotel KL, will continue to dish out stunning, crowd-pleasing MIGF festivel MIGF menu, specially crafted by experienced Chef Valmurugan Subramaniam.

Amuse Bouche
Begin the meal with Amuse Bouche, artistically prepared by the chef to express huge flavours in small bites. For our visit, chef presents a round, petite buttery pastry nestled with beans in rich, savoury sauce, topped over with foie gras that denotes light crispiness at the outside, mellow soft inside.

Starter
Rock Lobster Salad
Fennel and basil puree, lobster gazpacho, lobster terrine, asparagus and asian pears.

Starter is appetizing, having lobster salad that draws refreshing frutiness from sliced pear, adding juiciness into bouncy munch of lobster together with sourish, tangy dressing. Lobster terrine, the time consuming dish calls for a texture contrast in each bite. It is a wrapping of vegetable at the outer layer, notably soft and laid with moisture, enveloping chewy, meaty meat at the inside.

Soup
Chick Pea Soup
Poached Quail egg, broad beans and saffron oil

Chick Pea Soup, a warm, nourishing soup packed with wholesome creaminess. Stir and enjoy with mashed broad beans hidden beneath to heighten up the richness, plus a burst of flavour from saffron oil. Crowned with poached quail egg.

Hot Appetizer
Smoked Duck Breast
Fricassee of mushrooms with Vanilla emulsion

We love the fricassee of mushrooms, rich, oozy gooey with pleasant woodsy flavours, amplifies with smokiness from duck breast topping over, laced with airy vanilla emulsion.

Sorbet
Riesling Soursop

Cool, chilling sorbet on ice, gently infused with soursop to highlight citrusy note and underlying creamy sensation to promotes a clean, refreshing finish, invigorate the palate before proceed to mains.

Main Course
Chargrilled Wagyu Steak
Braised wagyu beef cheek, bone marrow, celeriac puree, pickled apples and grapes, mache leaves, coffee sauce

Rest assured, the char-grilled Wagyu steak is the winner among all dishes we devoured in this MIGF Menu. Slow braised till tender, almost melt in the mouth and thickly coated with coffee sauce-a sweet and savoury concoction that brings the versatility of coffee to next level.

Steamed Salmon Napoleon
Grapefruit, saffron, squid ink pasta and salsa Verde

Novel creation by the chef. It may not be appealing in taste, for it falls on mild, healthy side. Despite so, we can’t deny the fresh, succulent and firm bites of salmon, smothered with guacamole that surprisingly comes in good marriage, with a hint of sourness from graperuit and salsa to brighten up the overall flavour. Worth savoured slowly to let the natural sweetness of salmon to shine through.

Dessert
Valrhona Chocolate
Chocolate bronies, hazelnut mousse and passion fruit ice cream

End the meal sweetly with Summergirl’s long anticipated dessert- Valrhona chocolate brownies that showcases satisfying chocolaty, very dense and moist in texture. Paired with passion fruit ice cream.
