Malaysiaku: Culinary Tales of Folklores and Fables at The St. Regis Kuala Lumpur

In celebration of Merdeka, Malaysia’s Independence Day, The St. Regis Kuala Lumpur proudly presents a gastronomic journey – Malaysiaku. This immersive culinary experience pays heartfelt homage to the rich cultural heritage and traditions that shape Malaysia’s diverse landscape. Each dish is thoughtfully curated, utilising authentic ingredients and traditional cooking techniques from 14 different states, showcasing the distinct flavours and culinary treasures that Malaysia has to offer.

Carmen Chua, CEO of One IFC Hotel Sdn Bhd, lives by the quote “there is no place like home.” Despite her travels across the world for work and leisure, Malaysia remains her cherished home. The inaugural Malaysiaku in 2020 was curated by Carmen Chua, drawing inspiration from Malay proverbs. This event marked an innovative localised dining experience within Malaysia’s five-star hotel industry.

Since then, The St. Regis Kuala Lumpur has continued this cherished tradition, annually presenting Malaysiaku with a sumptuous array of delectable dishes. These culinary delights are skillfully crafted by a team of exceptional chefs, led by our talented Executive Sous Chef, Norazizi Taslim, who passionately embraces his local-provincial upbringing.

In 2021, Malaysiaku drew inspiration from the meaningful rituals and traditions of Malay weddings. The six-course menu mirrored the six significant rituals of Malay matrimony: “adat merisik” (courtship), “meminang” (proposal), “bertunang” (engagement), “malam berinai” (bachelorette party), “akad nikah” (wedding vows), and “bersanding” (reception).

This year, the captivating Malaysiaku menu masterfully weaves together popular fables such as “Puteri Santubong and Puteri Sejinjang,” “Kisah Itik Bertelur Emas,” “Batu Belah Batu Bertangkap,” “Kisah Tiga Ekor Kambing,” along with various other folklores and fables.

First course inspired by PUTERI SANTUBONG & PUTERI SEJINJANG
Terengganu – “Keropok Lekor” Tartlet, Fish “Satar”, “Sambal” Mayo & Pickled Vegetables
Melaka – “Tauhu Lembut” Caviar, Soya Velouté & “Ulam” Oil
Sabah – Poached Clams in “Hinava” Style with “Kasturi” Lime
Perak – “Serunding Rendang Tok” with Savoury Sable Cookies

Second course inspired by KISAH ITIK BERTELUR EMAS
Negeri Sembilan – Smoked Duck with Spiced Soup
Kelantan – Duck Egg with Turmeric Gravy
Kedah Duck – “Bergedil” with Curried Mayo & “Beras Hangus”

Third course inspired by BATU BELAH BATU BERTANGKUP
Selangor – Mango “Urap” with Oscietra Caviar served with Scallop Brandade & Dehydrated “Sambal”

Fourth course inspired by KISAH TIGA EKOR KAMBING
Pahang – Lamb with Bitter Leaf in “Opor” Style
Sarawak – Grilled Lamb marinated in Pepper & Chilli Oil
Perlis – Lamb Jerky marinated in Homemade Spices & “Kerutup Harum Manis”

Pulau Pinang – Grilled Stuffed Fish with “Sambal Petai”, “Nasi Bario Ulam” & “Air Asam”

Desserts inspired by LAGENDA PISANG RAJA UDANG
Johor – Caramelised Banana Chocolate Ganache served with Banana Ice Cream
Kuala Lumpur – Pineapple Tart, Pandan Coconut Madeleine, 70% Chocolate Bonbon

Through comprehensive explanations of each component, every dish is thoughtfully reinvented, we are not only to savor the flavours but also to appreciate the depth of Malaysian traditions and inventiveness behind each culinary masterpiece.
